Fried Rice
Fried rice is a beloved dish in many cultures, and it’s no wonder—it’s incredibly satisfying and easy to customize with your favorite ingredients. Below is one of my favorite ways to prepare it.
Ingredients
- 3 cups of cooked rice (preferably day-old)
- 2 tablespoons of vegetable oil
- 2 large eggs, beaten
- 1 cup of mixed vegetables (peas, carrots, corn)
- 3 green onions, sliced
- 3 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- Salt and pepper to taste
Instructions
- Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs and scramble them until fully cooked. Remove the eggs from the pan and set them aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Once heated, add the mixed vegetables and stir-fry for about 2-3 minutes until they’re tender.
- Add the cooked rice to the pan, breaking up any clumps. Stir well to combine with the vegetables.
- Pour in the soy sauce and sesame oil, tossing everything together until the rice is evenly coated. You can add salt and pepper to taste at this stage.
- Finally, fold in the scrambled eggs and sliced green onions, stirring everything together for another minute to heat through.
